Meehoon Goreng

I love meehoon. Meehoon goreng ke, meehoon sup ke, cantonese meehoon ke... everything meehoon I tak kan tolak. I can eat meehoon for breakfast, lunch and dinner, and I really don't mind...

But I cannot fry meehoon. I've tried it so many times before tapi selalu tak jadi. Sometimes the taste is there but rupanya tak macam meehoon ~ selalu "bergumpal2" macam sanggul. Bila tanya orang macamana nak goreng meehoon, they all kata, "You tak tau goreng meehoon? Ya Allah... punya lah senang!" That really put me off. When my MIL found out that I don't know how to fry meehoon, she said, "Ya Allah menantu aku... tak tau goreng meehoon?!" That made me so determined to try and get it right. Not so much to please her but to satisfy my own taste bud.

I paling suka meehoon goreng. For variety, I like meehoon yang warna putih tu ~ I don't know what it's called tapi orang selalu makan dengan cili hijau jeruk. Ada rasa masam2 sikit. Yum! Yum! Lagi satu meehoon yang taruh tauchu tu (apa nama dia?). This, I remember doing it masa SRT kat sekolah menengah dulu. Sampai sekarang mengidam nak makan tapi belum pernah jumpa kat mana2 kedai/restaurant.

So yesterday, I tried to make meehoon goreng again ~ after 4, 5 years lapse. Itu pun after a long consultation with my officemate, T***, who have tried this recipe the day before. She said hers turned out well (makcik ni memang pandai buat meehoon goreng... pejam mata pun dia boleh buat!), and her youngest daughter siap makan 4x tambah! When I heard that, I straight away thought of Nizzar. Yeah, maybe I should try and make a nice meehoon goreng for him to eat. He likes meehoon goreng, tapi he has never tasted the one that his mummy cooked. Usuallynya, beli from kedai lah, apa lagi.

So dengan semangat yang berkobar2, I went to buy the stuff after work yesterday, and terus memasak didapur (tak salin baju pun!). My friend said, "Just follow the recipe, sure jadi punya..." So I followed the recipe je lah. I pakai perencah daging & udang instead of ayam as suggested by the recipe. I think ayam tak sedaplah kalau buat perencah meehoon.

Dah tumis bahan2 semua, dah masuk sayur segala, bila time nak masukkan meehoon, I panicked. I was so afraid I would get it wrong again. I asked my maid to standby (dia pandai juga goreng meehoon) and watch while I goreng the meehoon. Berpeluh2 lah jugak! Susah betul nak menyeduk meehoon tu so that it's well spread sebab dia macam liat, kan? Habis satu dapur berterabur dengan meehoon yang terkeluar dari kuali!

Bila I dah penat, tukar pulak dengan si Sri. Bila dia penat, I take over balik, sampai lah jadi rupa meehoon. First time my meehoon turned out well!!

Wahh... I was so happy! Rasa pun ok. Bila dihidangkan, Nizzar makan, Nadim pun makan sikit (he's not really a meehoon fan), Nadira, Sri and I tambah 2x. Nadira said, "Wah... this is nice.." Hooray!! I made it, at last!!

I'm sure for those of you yang memang expert buat meehoon goreng will be wondering what's all this fuss about. But for me, being able to concur my fear of menggoreng meehoon is a BIG deal indeed coz now I know how to do it right. I think, the trick is to add water selagi meehoon tu belum masak/lembut (which I never did before). That's why my meehoon dulu selalu keras.

Now dah tau macamana nak buat, boleh lah try buat meehoon yang putih & yang pakai taucu tu. I'm so happy! I'm so happy! I'm so happy!!!

Here's sharing with you all the meehoon recipe that I used yesterday. Selamat mencuba!

BIHUN GORENG

INGREDIENTS:

600 gm bihun [rendamkan lembut dan toskan]
200 gm isi ayam [hiris nipis] - i used daging & udang
200 gm sawi [potong pendek]
250 gm kobis [racikkan] - I opted this out
1 batang carrot [potong halus saperti batang mancis] - opted out
3 keping tahu [gorengkan dan hiriskan nipis]
3 s/b minyak
sedikit kicap
garam
air

BAHAN MESIN / TUMBUK:

10 biji ciliapi
6 biji cili merah
2 ulas bawang merah
3 ulas bawang putih

METHODS:

1. Panaskan minyak dan tumiskan bahan mesin sehingga wangi.
2. Masukkan isi ayam dan kacau rata.
3. Bila nampak masak masukkan garam dan air. Kacau rata.
4. Masukkan kobis, carrot dan bihun. Kacau rata sehingga sebati.
5. Bila nampak bihun lembut masukkan sawi.
6. Gaulkan rata sehingga nampak bihun lembut. Rasakan garam.
7. Bila menghidang, taburkan hirisan racik daun bawang dan daun sup.

i'm ur silent reader..u r very funny and most of the times, i can relate to ur writings...anyway, i satu family suka meehun especially boy 2nd anak. kalau u tak suka letak2 air waktu masak(coz sometimes it resulted in meehun jadi kembang), u can rendam the meehun overnite, or u can add some hot water dlm meehun tu tapi rendam sekejap...

Wah terror la u ..... BJ, I pun a great lover of mee hoon, kalau I masak mee hoon I tak kisah sedap or not ehhehe i suka taruk chilli oil (like those u get from Chinese take-aways kat UK)... but my hubby who loves mee hoon too suka like what his mum makes... so I tak pernah pass buat mee hoon my MIL's style. She's got lots of styles for mee hoon but I could not be bothered (yet) cos my maid can cook very well. ehehhehe

I know I am really bad... I jarang masak... hardly make the effort. Even when I have the time, I'd rather buy than cook.... I really want to cook, but when I am tired I will not be inspired to cook at all.

We can never challenge our MIL's cooking. Anak (and cucu2) dia sure akan kata mak (Wan) dia punya jugak yang sedap. That's why I malas nak buat makanan yang my MIL selalu buat and is the family's favourite (like masak lemak kuning, kuih ketayap, jemput pisang dan banyak lagi). Sure they'll say Wan punya lagi sedap.

So I stick to the ones yang dia tak pernah buat (eg. lasagna, pasta, cakes, etc). Kalau buat yang ini, boleh hantar rumah Wan.

I have my days too... buat meehoon tu pun kira my rajin day lah. Otherwise, my maid yang akan prepare everything. Don't worry... you are not alone!

Don't you find it difficult to gaulkan the meehoon dalam kuali? Eee... so susah!

Try this recipe. Dia pedas cili api. Kalau tak nak pedas, kurangkan cilinya. Nizzar makan... tapi after every suap, he'll drink his water.

But then bila I buat western food my MIL will complain out loud that she does not recognise anything and bila rasa ajer (from someone else's plate mind u), she'll have the "ishk tak sanggup makan" look.

FYI, my MIL is very reserved with her eating. KFC pun dia tak makan. Masa my hubby and ex lived in UK dulu and my in laws pergi visit, whenever kena ada meal outside, she'll have to bawak bekal.... she definitely won't touch fish and chips la... hehehhe and then dapat menantu yg tak pandai masak malay food lak tue ..... memang ada clash sekali sekala ehhehe but when I am in her kitchen I just give way and vice versa.

U know what? my MIL selalu puji her ex DIL dekat I that that woman pandai masak, but then I get stories from the kids that they eat maggi mee if their maternal nenek and maid tak der kat rumah (meaning under Mama's care).

Aida - sorry meleret skit comment ehhehehe tengah stress nie but happy that it will be time to leave soon.

Kudos to you, as I am just like you too. I have never succeeded to make Nasi Goreng, in my whole entire life...yes...sigh...just like you, I tried a few times but the taste is not there at all, I guess kena ada skill la sikit...Mihun Goreng...lagila I takut nak cuba...kakakka...padahal I can masak western, roast beef and all...finally, a fellow friend...there is hope finally...hehehe...

Sampai skrg pun my mee hoon goreng skills tahap amateur saja. Ada je yang tak kena.

I tak tau la Mrs N.sepanjang baca entry you ni I tergelak sampai keluar air mata..kali ni you tulis kelakar laa...Tapi you dah berjaya buat mee hoon goreng,horeyyyy!!!Klau Nizzar suka makna nya mama dia dah berjaya. Mee hun yang putih tu di panggil mee singapore,dia tak pakai cili tapi pakai lada hitam. Yang pakai taucu tu di panggil mee siam..masa sekolah dulu kan ada belajar..Satu permulaan yang baik,lepas ni buat pulak mee hoon kari ya...

Next time you pergi Giant ke Carrefour ke - you cari Perencah Bihun Goreng Cap Adabi. I selalu simpan stock in case of emergency. Yang ni tak payah blend apa2 dah - just tumis perencah with a litlle oil, masukkan udang/daging/ayam, sayur and beehoon. Dah siap.


Nak lembutkan meehoon, normally I masak air and celurkan the meehoon (sekejap aje). Then you tos-kan bagi air dia keluar and run under water kejap. And I akan perah the excess air out jugak.


Nak gaul bagi rata - use 2 sudip. Kiri dan kanan.


I suka masak meehoon sup. Nanti I post the resepi.

Hello MrsNordin,
I usually pour boiled water on to a bowl of meehoon - immerse for about 5 minutes or so and then strain the meehoon and ran cold tap water through it. Leave in strainer to remove excess water and once it's time to gaul, its texture is nice and firm. Hope this helps and not forgetting, well done and thanks for sharing your recipe.

And, oh yes - I still remember Mee Hoon putih kat STF dulu. Sedaaaaappp!!!

My family is not into Mee Hoon sangat. We all more of Keluarga Kuey Teow :)

Well done! I also like anything bihun. I think many ppl like bihun because it's rice-based, unlike the yellow mee, which is flour-based. Tak muak lah makan bihun.

From my experience, the type of bihun matters too. Kalau u beli bihun yg murah, chances are dia cepat kembang and hancur. Tesco brand is fine, and so is a few others like Nona, Jasmine, to name a few.

Like you, I also prefer the flavor of beef and/or udang over chicken.

As for the mihun with the tauchu gravy, it's called mee siam in Singapore. I think kat Nynya's Kitchen ada - not so good looking, but taste is not bad lah. I blogged once (sometime this year) about it.

As for MIL's recipe, mmg lah susah nk compete. I've given up long time ago. I can't make nasi dagang as nice as my MIL's, or even pulut kuning, sup gear box, and the list can go on and on... But ada juga dishes that i cook better than her ;-) one of them is my rendang! She's a pure kelantanese, where as my late dad hailed from Muar ;-)

I pun suka mee hoon (bihun) kalau di bandingkan dengan mee kuning tu.

My SIL in-law punya mee hoon sedap amat, so far yang tersedap pernah I makan. Banyak kali dah dia tunjukkan macam mana dia masak, he!...he! bila I cuba, tak jadi sesedap masakan dia. Anyway anak-anak I kata sedap. Oklah kan? Itu yang penting.

Mrs. N, nak sedap lagi, you kena tambahkan udang kering. Rendam dan tumbuk kemudian tumis le selepas you tumis bawang hingga gareng, lepas tu baru masukkan daging ke, udang ke sotong ke...sos tiram, sos tomato dan kicap jangan lupa....

Hi Bj..ade -ade aje cerita u bulan posa ni..(banyaknya ide)dari sahur le, baju le sampai meehoon goreng...Bihun taruk taucu, kita pun suka..pernah buat skali tapi budak2 tak suka..tapi I used to remember kalu balik spore..kat geylang tu..wah..sedap bihun taucu!!!resepi tak tau le!Kat rumah ni...yang kecik2 ngan ayah dia je yang boleh makan bihun..sikakak2...dah jemu jelak sebab selalu menu bihun kat skola depa..( ade ka!!!)..

I had the same problem as you. However my meehoon goreng always turn lembik. But you will always learn how to improve after that, as long as you continue cooking the same dish. Try rebus air kulit udang first and add to it. Tastes a bit different, but I like it. Cuma jangan too banyak lah.

MrsN, i have been a silent reader and love to read your write ups. entertaining and i can relate to myself most of the time. some ppl will say senang je masak these simple dishes ie beehoon, meehoon n also keow teow goreng......which bila i buat, macam lembik la pulak...but still trying tho.

My favourite is kuey teow (sama selera dengan Shana). Tak kira kuey-teow goreng ke, sup ke.. janji kuey-teow. Meehoon can be accepted kalau kuey-teow tak ada... he.he..

I memang jenis tak pandai masak. Selalu guna ´perencah segera´.. he.he.. So, whatever it is, rasa tak lari jauh la... oops.

Anyway, WELL DONE with your meehoon goreng!!

My MIL pun sama, makan dia very particular. KFC dia memang tak makan becoz she doesn't eat chicken.

In your case, I think you have to learn how to make nasi goreng first. It's easier than bihun goreng. Once you've perfected the art of nasi goreng, baru boleh move on to bihun goreng. Otherwise, you'll get very depressed. Trust me!

I pernah try buat bihun pakai perencah tu. Tak jadi. But I guess it was not the perencah, it was the meehun. Meehun I keras, i think sebab tak cukup air.

Will try your method pulak.

I like meehun sup too. Tapi meehun sup senang, tak payah goreng meehun tu. Celur je, kan?

Err.. I think cantonese meehun lagi susah, tak? I've tried making cantonese kuey teow and it turned out well. Meehun ni tak pernah cuba lagi tho' I love it!

I think you are right about the type of meehoon. The other day i used Jasmine brand, as advised by my friend. But previously I used yang siam punya, ada cap gajah. Maybe that's why tak jadi...

If your grandfather is from Johor, I'm sure your rendang is delicious! Nasi dagang is another recipe that I want to try, tapi ramuan dia leceh lah...

I tak pernah try bihun goreng mamak altho' I love bihun. Kalau kat kedai mamak, mesti order mee goreng mamak. Somehow I have this notion that mamak tak pandai goreng mee hoon. Tak betul, ya? Then maybe next time I'll try order that.

Tapi I suka meehoon goreng bungkus kat gerai mamak tu (you know, yang dia letak2 kat atas meja tu..). Kalau petang2 after office, pekena mee hoon tu sebungkus dengan telur rebus sebijik taruk kicap, aduh... heaven......!

Thanks! I used to love kuey teow dulu but not so anymore. Kalau I goreng sendiri kat rumah, ok lah.. kalau order kat luar, selectively sebab selalunya kurang sedap.

Mana ada I pandai masak,pandai makan ada la..mee hoon goreng ni kekadang masak jadik,kadang2 tak jadik gak,biasa la tu, tapi I ada biras yang pandai masak mee hoon ni, bila teringin jer makan,call jer dia,gerenti beres.Dia buat sekali dengan sos nya,kicap manis +bawang besar+cili merah+asam limau.Mee siam tu cuma tambah taucu dan udang kering tanpa kicap.Yang lain suka hati nak taruk apa tapi selalu nya dia tauge dan kuchai.

been a silence reader here a few times but cant resist to leave words on this posting ....my hubby prefer my mee hoon to his mum he he...coz i add toucu and a bit of air asam when i fry mee hoon....so ada masam2 sikit ...best kalau guna minced toucu...

best result kalau u rendam the mee hoon overnite coz kalau guna air panas takut terlembik...n i pun suka makan mee hoon bungkus tuh dgn telur rebus and kicap...yummehh

Roast beef recipe:
- 1 kilo of daging batang pinang
- all dried herbs that you find in your pantry(i use thyme/rosemary/basil/cinnamon)
salt/pepper to taste
- honey sikit
then i marinade the beef for half a day in the fridge(kalau tidak marinade pun its ok)
then heat up the oven and bake it for 1 hour, in the medium section(1 kilo=1 hour baking)
do not disturb the beef, just bake it longer if you like it medium well, i like it medium.
that's all.hope ur family will enjoy it.and then for the sauce, use Kak Shana's recipe...hehehe...
